What is a Knife Block?

Our high-quality knives should be safely stored in a knife block when not in use. Sharp blades can not only lead to a risk of injury if not stored properly, but may also be damaged. A knife block is the ideal kitchen aid and storage place.

A knife block usually consists of a natural, rectangular block of solid wood, in which a special slot is provided for each knife. To prevent the inserted knives from forming bacteria in the event of residual moisture, the lower part of a knife block often has slots in the bottom.

Depending on the model, a pair of scissors and a grinding stick can also be inserted into a knife block. The respective knives are inserted from above in a slight wink into the appropriate receiving slot. Since these never rest on the cutting edge, they remain sharp longer and also do not become blunt as quickly.

Knife blocks can be made of a wide variety of woods. In addition to sturdy beech wood, models made of real bamboo are very popular. In addition to the natural woods, but also colored lacquered models are offered in the trade.

In our knife block test, we paid a lot of attention to the stability. Thanks to the slightly angular arrangement of the inserted knives, knife blocks require additional angular reinforcement on the front to prevent them from tipping over.

In addition to the previously mentioned models with integrated knife slots, knife blocks are also offered that have a special plastic insert. This is usually a type of rigid foam or polystyrene, which fills the inside of a knife block as a block. When we use it for the first time, we can stick a knife in there at a suitable place. We thus get a precisely fitting recess with a secure knife hold. We can easily replace this plastic block after prolonged use or high wear and tear.

Many manufacturers attach great importance to an attractive design. Especially the elegant knife blocks with lacquered surface and other accessories are always an eye-catcher in every kitchen.

How does a Knife Block work?

At this point, one characteristic can be named that all knife blocks must fulfill: Knives should be able to be stored gently and well sorted.

Gentle in this case means that the knives must not become blunt or otherwise affected by storage in the knife block. It is also important to prevent the blades of the different knives from rubbing against each other and damaging each other in the process.

There is also a clear advantage: since the knives are not stored in the drawer accessible to children, a certain degree of safety is ensured in this respect. This is because the knife block is usually placed at the back of the worktop or on a kitchen shelf. There, it also offers added decorative value.

Which knife block suits my cooking style?

In our knife block test, we would also like to explain which knife block is helpful for which cooking behavior. As a rule, such a knife block consists of a six- or seven-piece chef’s knife set. This includes in any case the previously mentioned types of knives. In most cases, a pair of scissors and a sharpening steel are also included.

For most cooking uses, these knives should be sufficient. Preparing food is the most fun when the right tools are at hand. We would like to recommend a knife block especially to beginners and recreational cooks. Inexpensive starter sets are already available for around US$30.

Those who place somewhat greater value on the blade quality of the knives will find very good variants in the US$100 range. For everyday cooking, you are already relatively well equipped.

Only the professionals prefer to use an unloaded knife block, which they then equip individually with their own knives. It can happen that a single knife alone can cost well over US$100. We are thinking here, for example, of the Asian chef’s knives, the so-called Santoku Damascus knives.

The advantage for choosing individual knives is that they offer a balanced weight distribution in the hand. In addition, the blades are high-quality forged and remain sharp even after prolonged use. Good knife care is, of course, a prerequisite.

For pure hobby cooks, however, we would like to recommend the stocked knife blocks with good knives. They are sufficiently dimensioned for everyday cooking. If you want to make it easy for yourself, you can use models that can be cleaned in the dishwasher if necessary. Nevertheless, you should better wash your knives by hand to enjoy them for a long time.

What types of blades are common?

In principle, you can still find three different blade materials today. The blade made of Damascus steel, which is especially widespread in Japan, looks great and is also super to handle. However, to this day it is not stainless steel.

Depending on the type of knife and manufacturer, stainless steel blades are particularly versatile and remain sharp for a very long time. Since they can be resharpened easily and without much expertise, knives with these blades have gained acceptance almost everywhere.

However, chefs as well as manufacturers point out that high-quality kitchen knives can be affected in the dishwasher. Therefore, it is generally not recommended to clean them in the machine. If you do have to, make sure that the knife blade does not come into contact with dishes or other cutlery.

Otherwise, it could be damaged during rinsing. Knives with ceramic blades have been increasingly found for several years and are becoming established as an alternative to the stainless steel blades already described. The great advantage of these knives is that their blades remain permanently sharp, so the knives never need to be resharpened.

In addition, these knives can be put in the dishwasher without hesitation. However, there is a catch: ceramic blades are extremely sensitive. They can therefore break very easily or be damaged when they come into contact with other knives, dishes or cutlery. And this damage cannot be repaired – unlike some knives with stainless steel blades.

Types of Knife Block Sets

As already indicated, there are quite different variants of knife blocks, which all bring their own advantages (and sometimes disadvantages).

Classic knife block made of wood

When talking about a knife block, most people have exactly this design in mind. This is a block, which is usually made of bamboo or rubber wood. As a rule, the top of the block is beveled so that the slots for the various knives are visible and easy to reach. In such a knife block, the slots are prefabricated for special knife shapes and sizes.

So usually only one very specific knife fits in the respective slot, which helps to keep things tidy. The catch, however, is that you have to rely on the knives from the knife block manufacturer. If a knife is damaged or even lost, you have to be able to buy exactly the same knife again. This is usually not a problem with knife blocks from well-known brand manufacturers.

However, it becomes more difficult if you have purchased a cheap knife block from an unknown manufacturer. Often it is not possible to trace who manufactured the knives. And even if it is: Many of these manufacturers are based in Far Eastern countries and do not offer individual knives for European consumers to purchase.

Wooden knife block with special plastic insert

The plastic insert named here consists of a large number of rods that are distributed close together over the entire interior of the knife block. Since you look at the tip of these thin rods from the front or, depending on the design, from above, you also have access to the spaces between them.

The knives can simply be inserted into these quite freely without having to take any compartments into consideration. Nevertheless, the knives find a very good hold here. Since the entire plastic insert can be removed (the rods are connected to each other at their lower end), it is also very easy to clean.

However, the fact that there are no pre-shaped compartments here can also prove to be a problem. Because if you place several knives here, the blades can possibly touch and damage each other.

Therefore, extra care is needed here. A major disadvantage with all universal knife blocks is the lack of clarity. This is because the possibility of being able to store knives completely freely means that a clear structure and order in the knife block can usually be dispensed with.

Stainless steel knife block with plastic insert

In principle, this design of the knife block hardly differs from the previously mentioned. However, the material of the knife block used here allows for completely different shapes and designs. You can often recognize these knife blocks by their round, curved shape. In most cases, the knives are pushed vertically from above into the knife block.

Here too, be careful that the knives do not come into contact with each other when they are pushed in!

Acrylic knife block

Crystal-clear acrylic makes these knife blocks a real eye-catcher. Of course, this is especially true when the knives are in specially designed slots and the blades can be easily seen from the outside. But also the version as universal knife block with the described chopstick insert is available on the market.

In general, acrylic knife blocks can be scratched quite easily. Therefore, they must also be treated with extreme care for this reason. Compared to wooden knife blocks, acrylic knife blocks also quickly become unsightly due to dust, grease and other dirt and therefore need to be cleaned regularly.

Knife board

Strictly speaking, the knife board is not a knife block, as it has a completely different design. For the storage of kitchen knives it makes use of their magnetic properties: On the side, the knife board, usually made of wood, acrylic or metal, has a magnetic strip that runs in a horizontal direction.

The knives can be easily attached standing upright. Even though a knife board is a nice eye-catcher, it still has some disadvantages. For example, the blades here are not well protected inside, as is usual with a knife block, but are on the outside. This means that they are much more exposed to dust, grease and moisture.

In addition, it happens with careless use that you detach another knife when attaching one. This can damage both knives, and a falling kitchen knife can of course be dangerous.

Special Shapes

Most special forms of a knife block are spectacular-looking sculptures that serve to store kitchen knives. Therefore, advantages and disadvantages cannot be generalized here. They are always an eye-catcher, but not all of these special shapes are really recommendable and practical.

For example, the knives are not always stowed inside the holder, but mostly pierce it. What is undoubtedly a visual highlight for the kitchen, can therefore under certain circumstances even be dangerous, since the tips of the blades protrude freely into the air.

For families with children, such knife blocks are therefore not recommended at all. Moreover, not for less skillful people. And if work in a kitchen is often hectic, the risk of injury is also too great.

It is clear that such knife blocks must also be cleaned regularly due to grease and moisture.Other special forms represent knife blocks made of glass or concrete. However, these can only be found from very few manufacturers and usually cost a small fortune.

Advantages of Knife Block Sets

Our knife block comparison test winners not only represent the actual storage options, but are also usually equipped with several professional knives. A single knife block only makes sense if we can still use our knives and need the wooden block as a replacement.

A knife block is used by ambitious hobby chefs, but also by professional chefs. A multi-piece knife block includes, among other things:

  • a paring knife with a short blade,
  • a chef’s knife with a wide and long blade,
  • a carving knife with narrow and long blade,
  • a fillet knife with narrow and long blade and
  • a sturdy bread knife with a long blade.

The paring knife is offered in both straight and curved versions. Here, personal preferences play an important role. This knife can be used for finer work, such as cleaning, peeling or cutting fruits and vegetables.

The most commonly used knife is the chef’s knife. With its wide and sharp blade we can cut meat and vegetables, but also chop ingredients. In addition, the wide blade is ideal for weighing herbs.

The carving or ham knife has a very fine blade. It is the ideal tool when we need to cut meat. We can also use it to prepare vegetables. Thanks to the narrow blade, the cut material sticks less.

The fillet knife has an even thinner blade and is suitable for cutting wafer-thin slices of fish and meat. It is also the right helper for filleting poultry.

Already traditional is the sturdy bread knife. The blade is serrated and ideal for cutting hard bread crusts or roasts.

Design & Quality of Workmanship

First we turned to the actual knife block. Most models consist of a solid wood block in which we can safely insert the individual knives. Here we liked the natural models very much, which were also generally characterized by a high stability.

However, those who place great value on appearance and design will also find elegant knife blocks with a lacquered surface and additional metal applications. In general, this remains a matter of taste. You should choose a knife block that fits their kitchen and can be integrated there visually well.

Types of Knives

For most household and kitchen uses, a knife block loaded with knives is the right choice. Be sure to find out which knives are included. In some cases, knife blocks are even offered in nine-piece versions. In any case

a meat or chef’s knife,

  • a paring knife,
  • a carving knife,
  • a steak knife,
  • a prep knife and
  • a bread knife

be present. With this basic equipment you are equipped for the most important tasks in the kitchen and cooking.

The quality of the knives

As beautiful as a knife block may be, however, much more important are the knives it contains and their quality. A good kitchen knife should lie well in the hand and remain sharp for a long time. Therefore, the quality of the handle and its ergonomics also play an important role.

Some knives have a real wooden handle, others have a smooth metal handle and inexpensive representatives rely on a riveted plastic handle. Regardless of this, we must be able to safely guide a knife through this. Various cutting techniques must be taken into account:

The cradle cut

The cradle cut is the preferred cutting technique for chef’s knives, with the blade tip always remaining on the cutting surface. The material to be cut is cut with the middle part of the blade. A rocking motion moves the blade forward and backward while simultaneously pushing the material to be cut forward. Professionals can work relatively quickly and rhythmically with this technique.

The basic technique

In this cutting technique, we embrace our cut material with the thumb and the little finger. The middle fingers lie slightly curved on the cut material, but always behind the cutting edge.

The vegetable cutting technique

Vegetables are cut most safely when we cut them with the back of the blade.

The bread cutting technique

Regardless of a hard crust, a loaf of bread is particularly soft inside. Therefore, we must not apply too much pressure on the loaf. For bread slicing, we typically use a bread knife with a serrated saw blade. After lightly scoring the crust, we can cut a slice off the loaf with a few pulls, taking advantage of the full blade stroke.

With the help of these basic cutting techniques, we were able to get a good idea of the quality and handling.

The cleaning and care of a knife block

We should never clean the actual knife block in the dishwasher. Severe contamination can be avoided if after using a knife, we clean it carefully.

In the case of knives, cleaning and care must be carried out with particular care. The high-quality blades made of damask or stainless steel are not dishwasher safe. They must not be cleaned with too harsh detergents. It is better to clean these knives in warm water with a little soapy water and dry them well afterwards.

The ceramic kitchen knives, which are also available in a knife block, are dishwasher safe and do not lose their sharpness as quickly.

What should I look for when buying a knife block?

In our knife block test, we would also like to give you some tips to help you find the right model for your purpose. First, consider which knives you absolutely want to use in your kitchen. Is the previously mentioned basic equipment sufficient here or do you also need any special knives?

Of course, the price also plays an important role. How much are you willing to spend on a good knife block? Interestingly, the upper limits are almost unlimited. For example, a genuine Asian chef’s knife can cost several thousand dollars among enthusiasts.

When buying a knife block, make sure that it is stable and made of sturdy solid wood. Cheap suppliers save here and offer you softwood instead, which can get unsightly dents and cracks after a short time.

It is important that the knives contained in a knife block are balanced in the hand, are very sharp and can thus smoothly and cleanly cut a cutting material. With a good knife you do not have to exert too much pressure when cutting.

Heavy knives have the advantage that you have to apply less force when cutting. Combined with a sharp blade, these knives go through a cutting material much easier.

Also, take a look at the knife handle. Not only should a handle be ergonomically designed, but it should also be non-slip. If possible, the transition from the blade to the handle should not have edges or protrusions. Otherwise, dirt can easily get caught in these and make cleaning more difficult.

Brush inserts for a knife block

For the knife blocks without mounting slots, brush inserts often serve as a stable hold for the inserted knives. Unfortunately, these cannot be cleaned as well and therefore need to be replaced in due course. Every manufacturer of such knife blocks therefore also offers new brush inserts that can be inserted into the block’s recess for an exact fit.

Other manufacturers use foam materials in which the inserted knife creates its own knife slot. However, after frequent use, the foam can wear out, so again we need to replace it.

A suitable cutting board

To effectively prepare food, we can not do without a good cutting board. Today, there are a wide variety of materials for this purpose. In addition to hardwood and bamboo, high-quality plastics are increasingly used.
