Besides the devices that can be refilled, there are also disposable variants, whose grinder is created from simple plastic. These devices, which are offered at bargain prices in grocery stores, do not have much in common with high-quality pepper mills. They are only a stopgap solution that cannot replace the real mills.

How does a Pepper Mill work?

All variants of the pepper mill operate a grinder into which the grains enter, which are in a separate container. The peppercorns, which are usually white, black or red, gradually enter the grinder. There, the spice is split into small components. In the process, the grinding gap usually narrows to such an extent that the grains break.

In some models, the grinder must be operated manually. This often involves moving a knob located on the housing of the mill. How to clean Pepper Mills?

Pepper mills are particularly practical devices. After all, they grind the spice fresh, which ensures optimal taste. After some time, the grinder must be cleaned because residues of the pepper can get stuck. Pepper mills are equipped with different grinders, which are not always easy to clean.

In our test series, we were able to remove impurities mainly from the devices that have a grinding mechanism made of ceramic. The mills with a grinding mechanism made of stainless steel were also relatively easy to clean.

Pepper also contains essential oils that can clog the grinder over time. If the pepper comes into contact with moisture, the inside of the mill can gum up very quickly.

Especially when used over a steaming pot, clogging can occur. These are not always easy to remove because the grinder is not reached by the user.

Basically, the inside should not be brought into contact with liquid, because this can damage the grinders. If they are made of stainless steel, the inside can even rust. In any case, these devices should not be cleaned in the dishwasher. Instead of wet cleaning, another tool that cleans all grinders is recommended. Simply use uncooked rice, which you fill into the container of the mill. Now grind the rice. This will clean the inside because oil and spice residues will stick.

Using rice is the best way to clean the delicate interior of the mills. If rice is not at hand, salt can also be used, which has similar properties. However, the outer shell should not be treated with either rice or salt. Instead, a damp cloth will help remove residue. However, be sure to remove any residue of moisture immediately. Otherwise, the moisture can affect the outer shell. The result can be permanent damage that not only spoils the look.

Consumers can choose from a wide range if they want to buy a hand-operated pepper mill. These kitchen appliances come in classic designs that are reminiscent of times gone by. The nostalgic shapes of such mills contribute to their appealing look. Manufacturers also offer other hand operated pepper mills. Variations are available that feature rustic shapes. Of course, it is also possible to purchase mills that look much more modern.

The best devices have additional functions. For example, the degree of grinding can be adjusted. Often, these mills also protect the pepper, which is separated from the outside world. Electric Pepper Mills

In addition to manual mills, various manufacturers also offer variants that have their own drive. In most cases, this motor is powered by batteries. Users are spared the rotary movements; instead, the peppercorns are ground at the push of a button. This can be an advantage when cooking under great time pressure.

Unlike the hand-operated versions of the pepper mill, the electric kitchen appliances offer practical features. For example, many electric mills are equipped with lighting, which can simplify the work.

After all, the food to which pepper is to be added is illuminated when the mills are used. This allows users to see exactly how much pepper has already been added to the food.

Other advantages of electric mills often include sensors that detect movement. For example, some pepper mills register that grinding is to take place. Thereupon, the devices start working independently. At the same time, some mills can not only distribute pepper, because they also have a salt unit. The materials from which the mills are created should also factor into your purchase decision. Pay particular attention to the grinder, which is best created from stainless steel or ceramic. Grinders made of plastic are not recommended. You should generally avoid plastic, because this material is not able to withstand the stresses.

Grinders made of stainless steel are considered particularly robust. In most cases, mills whose grinding mechanism is made of the noble steel have a particularly long service life. If the pepper mill is also used for grinding other spices, the stainless steel grinder can be used for these purposes as well. Only the products made of treated steel are recommended.

Otherwise, there is a risk that the grinder will rust, which will shorten its life. They then wear out very quickly because moist pepper residues stick the grinder, which leads to rust. Grinders are also created from ceramic. This material is also considered to be robust. Because ceramic has a high degree of hardness, the grinding strength can often be regulated very precisely.

However, the mill is also made of external materials. Often wood, stainless steel or glass is processed. The glass mills are the most affordable. However, glass has a significant disadvantage. The incident light hits the pepper, the aroma of which can be diminished. Therefore, these devices should be stored in a dark place when they are not in use.

Other pepper mills are made of wood or stainless steel. These materials are tasteless, which is why they do not affect the aroma. Because no light can enter, there is little risk that the aroma will be diminished. Therefore, these mills are preferred by numerous connoisseurs. They often also look very attractive, which is why they are also used in the catering trade. Gourmets do not only reach for the mill made of wood or steel there.

Quite different are the inexpensive models, which are made of plastic. The material can transmit odors and tastes. It also wears out very quickly. The plastic can discolor over time, which affects the appearance. In the worst case, it can even break small parts that are in the grinder. These then get into the food, which can endanger health. Therefore, we recommend buying only mills that are made of stainless steel or wood. These guarantee an optimal aroma that will be noticeable on the plate.

Also pay attention to the size of the mills. The larger the kitchen appliance, the more grains it can hold. This saves you the time-consuming refilling, which is part of the annoying daily routine with other pepper mills. However, if the mill is rarely used, aroma loss may occur. In this case, you should rather opt for a smaller model. Otherwise, the large mills, which we have tested in our test series with excellent final results, are a good choice.

If you want the mill to fit on the spice rack or in the cabinet, you need to consider the height when buying. If there is little space available, it can be a smaller version. Otherwise, you can choose a larger version, which is quite convenient to use. In advance, you just need to decide whether to buy a manual or battery-powered device.

How are Pepper Mills tested?

Different companies like Peugeot, Zassenhaus or WMF offer different pepper mills. Thus, consumers can choose from a huge assortment. However, not all mills seem to deliver the performance that buyers rightly expect. We were able to convince ourselves of this through practical tests, which we conducted as part of a series of tests. These tests showed that not all mills can be recommended.

As part of the tests we carried out, we examined the mills very closely. Among other things, we examined the grinding mechanism.

We determined, for example, how quickly residues of the pepper settle in the sensitive interior of the grinders. In this context, we also tested the material from which this component is made. It turned out that grinders made of stainless steel and ceramic are particularly recommended. Of course, we also tested the quality of workmanship, which differs significantly.

However, as part of the tests, we examined not only the inner workings of the mills. We also tested the outer shell. Among other things, we analyzed the material quality and design. We also inspected the quality of the workmanship, which differs from mill to mill. In our series of tests, only those devices that are well finished inside and out came out on top.

However, good workmanship was not enough to achieve excellent results. Finally, mills must have a large volume so that refilling is rarely necessary. Therefore, we also analyzed with what amount of pepper the respective mill can be filled. In our series of tests, only the kitchen appliances that can be used for a long period of time without having to refill the tank with pepper were able to pass.

We also analyzed how quickly the pepper gets into the food. In this context, we also tested the drives. We tested the power of the motor if it was an electric device. In the process, we also examined how long the batteries, which are located in the device.

The flavor is well preserved when moisture and oxygen do not reach the spice. For storage, you should therefore use dark containers that can be sealed airtight.

After all, these easily absorb the odors that exist in the environment. Therefore, it is not a good idea to store pepper with other herbs. Instead, use small plastic jars or jars that do not allow light to reach the spice, if possible.

In most cases, a pestle is used, the shape of which is reminiscent of a grater. With this tool, the tip of which is roughened, peppercorns can be separated into very small pieces.

However, working with a pestle requires a lot of time. A great deal of force is required for the pepper to be crushed. Therefore, this alternative is hardly used anymore. Finally, a pepper mill can achieve incomparably better results in less time. Only a little force is required. Sometimes even a push of a button is enough, because the devices have an electric drive.

Another alternative is available in any supermarket. There you can purchase small containers that contain ground pepper. The fine dust can actually be used for seasoning. However, the taste quality does not come close to the pepper that is freshly processed in a mill. Finally, oxygen often gets to the pepper dust, so the flavor quickly fades. Thus, the pepper must often be replaced, although the dust is not completely consumed.

For this reason, too, the purchase of a pepper mill can be worthwhile. There pepper can be processed best. The alternatives are indeed a way to grind the spice. However, neither mortars nor graters can compete with high-quality mills. The already ground pepper is at best a stopgap solution that will not permanently delight connoisseurs. These reach for the mill to refine the food with a fine pepper note, which comes from freshly ground grains.
