Frequently Asked Questions: Steak Knives

What is a Steak Knife?

A steak knife is exactly what the name implies: a knife designed specifically for cutting steaks. Manufacturers not only want to optimize handling, but also to be as gentle as possible on the meat during cutting.

The focus is on not tearing the fibers and preventing meat juices from escaping as far as possible.

How does a Steak Knife work?

Steak knives have a very special, slightly curved shape, which is adapted to the requirements of meat. By the way, in the first place most manufacturers are oriented to beef, but of course it is also possible to cut pork, game and poultry.

Steak knives are in the best case very sharp, so they can easily cut the fibers even with semi-raw meat. Elementary here is that the knives can cut through the tissue with little force and that the meat is not simply crushed. In the latter case, too much meat juice would escape and a steak would simply dry out.

In addition to shape and sharpness, steak knives are characterized by a serrated blade. This provides an excellent starting point when working on meat, so that cutting is successful even without prior treatment.

As a rule, the steak knife blade is about 12 centimeters long and thus allows the cutting of small and large steaks.

Advantages of Steak Knives

The biggest advantage of steak knives is their ease of use. The processing of meat is generally a science in itself. Laymen are often overwhelmed here, because they are not familiar with the many peculiarities. Depending on the type of piece, there may be a layer of fat or a tendon in the meat.

With a good steak knife, such occurrences are no problem, as the knife can cut well even in such cases. However, there are also advantages when cutting all other types of meat. Due to the sharp blade, a steak knife virtually glides through the meat, so that only very little meat juice escapes and the fibers are hardly destroyed.

Steak knives are not only great for eating, but also for preparation. Good models can also easily handle raw meat. So, for example, you can also use it to cut steaks yourself from large pieces such as roast beef or tenderloin. Especially in combination with a meat fork, this works quite excellently.

In principle, steak knives also show their positive properties with many other dishes. So, of course, you can also cut a cutlet with it without further ado. However, we would rather advise against such use, as this can quickly dull the blade. Anyone who decides to use a steak knife should use it primarily for cutting meat.

Types of Steak Knives

Steak knives from different manufacturers are always very similar, because they all follow a very similar philosophy. Experience has simply shown that the typical shape of steak knives is the optimal way to cut meat. Nevertheless, there are some differences now and then.

First and foremost, users are spoiled for choice when it comes to size. Very large steak knives are always an option if you want to use them to cut large pieces of meat yourself. The downside, however, is that eating with such a knife is less convenient.

With small knives, the advantages and disadvantages are exactly the opposite. You can use it to eat your finished steak very comfortably, but hardly cut pieces of meat into small steaks. In general, we recommend that a steak knife should have a length of at least 12 centimeters, so that the use is as easy as possible from the hand.

When it comes to the handle, there are also some differences between different steak knives.

As with all other knives, users have a choice of different materials, mainly wood, plastic and metal. Which one is the best option depends on your own personal preferences. Plastic is usually a bit lighter, which also makes the overall weight of the knife lighter.

Steak knives with wooden handles, on the other hand, offer greater sturdiness and often a slightly better center of gravity. A metal handle can combine advantages from both worlds, but caution is advised here. We can only recommend a pure metal handle for high-quality knives. Many cheap models do not separate the handle from the blade. As a result, heat quickly spreads to the handle, as metal conducts heat much better than wood or plastic.

Such knives are then completely unsuitable for use on the grill or in the pan. A frequently used solution to this problem is a metal handle, which is provided with a cladding of wood or plastic.

How are Steak Knives tested?

In our steak knife test, every single knife has to undergo numerous tests in different categories. Only if a model can convince in every respect does it have a chance of winning the coveted title of steak knife comparison test winner. You can find out what we place particular emphasis on in the following.

A good steak knife must always have the sharpest possible blade in order to be able to cut through meat well, both raw and cooked through. In the test, we look at the cutting performance of steak knives under various conditions and compare the results directly with the competition.

This category is all about how well a steak knife fits in the hand. This requires a shape that ideally adapts smoothly to the hand. In addition, the materials should also be as high quality as possible and feel good. Finally, the center of gravity of a knife is of interest. It determines how precisely a knife can be wielded.

In terms of handling, it is largely a combination of the categories of ergonomics and sharpness. A knife with a well-thought-out design and a high-quality blade provides optimal conditions for good properties in everyday use. In the test, we check the handling of the steak knives in numerous different tasks and tell you how well they perform.

On this point, the blade of the knife again receives a lot of attention from us. It should not dull too much even with frequent use, so that frequent re-sharpening is not necessary. However, a resistant blade is not only easier to maintain, it also offers better longevity. The best steak knives accompany their owners even with frequent use for many years, sometimes even for a lifetime.

Inferior models, on the other hand, will have to be replaced sooner or later because the blade can no longer be sufficiently sharpened once it reaches a certain degree of wear. Apart from the blade, we also consider all other components of a steak knife in terms of their durability.

Quality & Processing

In this category we take a closer look at what materials the steak knives are made of and how well the knives are finished. Everything should always remain firmly in place. Parts that come loose by themselves after a short time are absolutely not to be tolerated.

Price-Performance Ratio

Even if a steak knife does everything right and does not make any gross mistakes in the steak knife test, the price should not be too high. For this reason, we compare the price estimated by the manufacturer with equivalent models from the competition.

This way, we can find out where customers can expect fair prices and which knives are simply overcharged. However, we also draw attention to when a steak knife is still interesting for beginners thanks to a favorable price, despite some shortcomings.

What should I look for when buying a steak knife?

When buying a steak knife, your own needs should always come first. After all, even the best knife for beef, for example, is of little use if you eat very little beef or even none at all. Therefore, first consider whether the purchase of a steak knife makes sense at all.

If you prefer poultry, you will find specially designed knives for it, which are superior to a steak knife in many respects. However, if it is to be a steak knife, high quality is of crucial importance.

It is not worth saving too much at this point. All too cheap steak knives not only mean compromises in handling, they often break after a short time. The bottom line is that it is cheaper to invest a little more once instead of buying new knives regularly.

It may also make sense to order an entire set of steak knives. This way, the whole family will be happy to have a good knife for a steak at dinner, and even spontaneous visitors won’t have to settle for a makeshift solution.

When buying, it is also important to consider whether a steak knife is only to be used for eating, or whether it will also be used for preparation. In the latter case, it sometimes makes sense to reach for a slightly larger knife. This makes it easier to cut large pieces of meat, even when raw.

It is entirely a matter of taste, however, whether the handle of a steak knife should be made of wood, plastic or metal. There are no absolute advantages for everyday use. If you have the option, simply try out different knives yourself before buying and decide on the option that best suits your own ideas.

Without question, price also plays a role when buying a steak knife. As mentioned above, most cheap knives are to be avoided, as the disadvantages simply outweigh the advantages. However, this does not mean that steak knives must necessarily be expensive.

If you compare current prices, you can also easily find a good steak knife at a fair price. Especially on the Internet, this is possible with just a few clicks.

Steak Knife Accessories

For each steak knife there is a selection of useful accessories, with which the use as well as the care and storage work even better. For example, a meat fork is ideal for cutting meat without any problems. Like a steak knife, it protects the fibers in the meat and prevents it from drying out.

At the same time, however, the steak is held in place, making it particularly easy to cut. With the right combination of steak knife and matching fork, high-quality meat can be cut like butter.

Indispensable for a good steak knife is the necessary tool for sharpening the blade. Whether sharpening steel or sharpening stone is up to you. Both variants achieve equally good results when used correctly. As already mentioned, there are also special solutions that take laymen by the hand and enable sharpening in a particularly simple way.

Such products, also known as “Easy Sharpening Tools”, are somewhat more expensive to purchase than a simple sharpening steel, but the investment is worthwhile for anyone who lacks the necessary experience in handling knives.

For the proper storage of steak knives, a knife block is a good idea. This keeps the knives always handy, while at the same time the blades are inaccessible, so that injuries can not occur. In addition, many knife blocks also score with an aesthetic appearance that enriches any kitchen. Alternatively, for storage in a drawer, there are slipcovers for steak knives in various sizes. These protect the blade from harmful influences and dirt, while providing increased safety.

Of course, accessories are not essential for using a steak knife. However, all those who enjoy using their knives frequently will do well to make such an investment. With the right care and storage, experience has shown that steak knives last much longer. Those who treat their knives with care can keep them for a lifetime in many cases.

Steak Knife Alternatives

In principle, you can of course use many other types of knives for cutting meat. Even with a utility knife or a santoku knife, cutting steaks usually succeeds without any problems. If used correctly, there are not even noticeable disadvantages to be expected. However, this requires some expertise in handling such knives.

Untrained hands quickly tend to exert too much pressure. However, this should be avoided at all costs, especially with steaks, as they lose liquid more quickly than most other foods and can dry out. Vegetable knives, bread knives and paring knives should be avoided altogether for steaks.

These do not have the necessary sharpness to cut a steak and the size as well as the shape of the blade do not meet the requirements.

When buying a new knife, there is no reason to go for anything other than a steak knife. In terms of price, there are no significant differences in this regard, so you can also choose the optimal solution right away. Of course, steak knives complement other types of knives perfectly in any good kitchen.

If you don’t have a steak knife handy at the moment, but still want to enjoy a steak, opt for a knife with a serrated blade that is as sharp as possible.
